Dough:
✔️ Flour - 200 g
✔️ Cold butter - 80 g
✔️ Egg - 1 pc.
✔️ Sour cream - 50 g
✔️ Powdered sugar - 1 tbsp.
✔️ Baking powder - incomplete tsp.
✔️ Salt - a pinch
Filling:
✔️ Ricotta cheese — 200 g
✔️ Yolk — 1 pc.
✔️ Sugar or powdered sugar — 2–3 tbsp. (to taste)
✔️ Cornstarch — 1 tbsp.
✔️ Vanillin or zest of ½ orange (both are possible)
✔️ Strawberries — 300 g

Let's start with the dough. Mix flour, powder, baking powder and salt. Chop cold butter into it - grind everything into crumbs. Add the egg and sour cream, quickly gather the dough into a ball (do not knead for a long time), and put it in the refrigerator for at least 40 minutes.
Meanwhile, make the filling: mix ricotta, yolk, sugar, starch, and zest (or vanilla) until smooth.
Roll out the chilled dough into a circle, place the filling in the center, and top with sliced strawberries. Fold the edges. Grease them with milk or egg white and sprinkle with almond petals or sugar if desired.
Bake at 170°C for 40–45 minutes until golden brown.
🍨 Serve cooled, perhaps with a scoop of vanilla ice cream. And if you let it stabilize in the fridge, you'll get a real cheesecake in the form of a biscuit.
