Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh parsley, chopped

Instructions:

  • Rinse the quinoa under cold water and drain.
  • In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  • While the quinoa is cooking, preheat the grill to medium-high heat.
  • In a bowl, toss the bell peppers, zucchini, and onion with olive oil, garlic powder, salt, and pepper.
  • Thread the vegetables onto skewers and grill for about 10 minutes, turning occasionally, until they are tender and slightly charred.
  • Once the quinoa is cooked, fluff it with a fork and mix in balsamic vinegar and parsley.
  • Serve the grilled vegetable skewers over the quinoa salad.
